Description

Ingredients

  • 1 package Cheese Tortellini (fresh or frozen)
  • 1 pound Italian Sausage (mild or spicy)
  • 2 cups Broccoli Florets
  • 3 cloves Garlic, minced
  • 1 cup Heavy Cream
  • 1 cup Parmesan Cheese, freshly grated
  • 1 tablespoon Olive Oil
  • Salt & Pepper to taste

Instructions

  1. Cook the tortellini in a large pot of salted boiling water according to package instructions until they float; about 3-5 minutes for fresh.
  2. Sauté the sausage in olive oil over medium heat for 5-7 minutes until browned.
  3. Add the minced garlic and broccoli; sauté for 2-3 minutes until broccoli is bright and garlic is fragrant.
  4. Create your creamy sauce by pouring in heavy cream and bringing to a simmer; stir in Parmesan cheese until melted and thickened.
  5. Combine the tortellini with the sauce, adding reserved pasta water if needed. Season to taste.
  6. Serve hot, garnished with additional Parmesan and parsley if desired.

Notes

For a lighter version, substitute heavy cream with a dairy-free alternative. This dish is best enjoyed fresh but can be prepped in advance for convenience.
