Instructions
- Prep the potatoes by peeling and cutting them into bite-sized chunks. Rinse under cold water.
- Boil the potatoes in a large pot covered with cold water, adding salt. Simmer until fork-tender for about 15-20 minutes.
- Prepare the garlic by mincing it finely.
- Make the creamy mixture by melting butter in a saucepan, sautéing garlic, and stirring in heavy cream and Parmesan until thickened.
- Combine the drained potatoes with the creamy mixture, mashing until creamy.
- Garnish with fresh chives before serving.
