Instructions

  1. Prep the potatoes by peeling and cutting them into bite-sized chunks. Rinse under cold water.
  2. Boil the potatoes in a large pot covered with cold water, adding salt. Simmer until fork-tender for about 15-20 minutes.
  3. Prepare the garlic by mincing it finely.
  4. Make the creamy mixture by melting butter in a saucepan, sautéing garlic, and stirring in heavy cream and Parmesan until thickened.
  5. Combine the drained potatoes with the creamy mixture, mashing until creamy.
  6. Garnish with fresh chives before serving.
