Ingredients
2 lbs chicken cutlets
1 tsp salt, divided
1 tsp ground black pepper, divided
2 tbsp extra-virgin olive oil
6 large garlic cloves, grated
1 cup dry white wine (or low-sodium chicken broth)
4 cups coarsely chopped fresh spinach
1 cup heavy cream
Optional twists:
Zest of 1 lemon + 2 tsp lemon juice (for brightness)
½ tsp smoked paprika (rub on chicken)
¼ cup grated Parmesan (melted into sauce)
Red chili flakes for subtle heat
Instructions
Season chicken with ½ tsp each salt and pepper (plus smoked paprika if using).
In a large skillet, heat olive oil over medium-high. Sear chicken 3–4 minutes per side until golden and cooked through. Transfer to a plate.
Add garlic to the pan and sauté 30 seconds. Pour in wine to deglaze, scraping up browned bits. Simmer 2 minutes.
Stir in spinach, remaining salt and pepper, and cook until wilted.
Add heavy cream, Parmesan, and lemon zest + juice. Simmer 2–3 minutes until thickened slightly.
Return chicken to pan, spoon sauce over top, and cook 2 more minutes to heat through.
Garnish with chili flakes or fresh herbs if desired.
