Ingredients

- 1 pound gnocchi
- 4 cups fresh spinach
- 1 cup feta cheese, crumbled
- 1 cup heavy cream
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt & pepper to taste
- Parmesan cheese for garnish (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat and sauté the garlic for about 30 seconds until fragrant.
- Add the fresh spinach and cook for 2-3 minutes until wilted.
- Pour in the heavy cream, stirring gently and allowing it to simmer for about 3-5 minutes.
- Meanwhile, cook the gnocchi according to package instructions in salted boiling water (about 2-3 minutes). Drain and add to the creamy sauce.
- Stir in the crumbled feta cheese and season with salt and pepper to taste.
- Transfer the creamy gnocchi to a serving dish, garnish with parmesan cheese, and serve.
Notes
For added flavor, consider adding red pepper flakes or a splash of lemon juice.
