Description

A comforting dish featuring soft potato gnocchi tossed in a creamy spinach and feta sauce.


Ingredients

  • 1 pound gnocchi
  • 4 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt & pepper to taste
  • Parmesan cheese for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat and sauté the garlic for about 30 seconds until fragrant.
  2. Add the fresh spinach and cook for 2-3 minutes until wilted.
  3. Pour in the heavy cream, stirring gently and allowing it to simmer for about 3-5 minutes.
  4. Meanwhile, cook the gnocchi according to package instructions in salted boiling water (about 2-3 minutes). Drain and add to the creamy sauce.
  5. Stir in the crumbled feta cheese and season with salt and pepper to taste.
  6. Transfer the creamy gnocchi to a serving dish, garnish with parmesan cheese, and serve.

Notes

For added flavor, consider adding red pepper flakes or a splash of lemon juice.
