Ingredients
8 small chicken breasts, skinless and boneless
2 tsp cumin
1 tsp paprika
1 tsp chili powder
2 tsp garlic powder
1 tsp salt
1 tsp black pepper
2 tbsp olive oil
2 tbsp butter
1 white onion, finely chopped
4 jalapeños, seeded and diced
6 garlic cloves, minced
½ cup heavy cream
⅔ cup chicken broth
4 oz cream cheese
2 cups shredded cheddar cheese
Sliced jalapeños, for garnish
Instructions
Season the chicken with cumin, paprika, chili powder, garlic powder, salt, and pepper.
Sear the chicken in olive oil over medium heat until browned and cooked through. Remove and set aside.
Sauté aromatics: In the same pan, melt butter. Add onion, jalapeños, and garlic; cook until softened.
Make the sauce: Stir in heavy cream, broth, and cream cheese. Simmer until smooth. Add cheddar cheese and stir until melted.
Combine: Return chicken to the skillet and spoon sauce over the top. Simmer briefly to blend flavors.
Garnish with sliced jalapeños and serve hot.
