- 1 lb boneless, skinless chicken breast
- 4 cups chicken broth
- 8 oz cream cheese
- 1/2 cup heavy cream
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried herbs (thyme, oregano, or Italian seasoning)
- Salt and pepper to taste
- 1 cup spinach or kale (optional)
Instructions
- Sauté the Aromatics: In a large pot or Dutch oven, heat a splash of olive oil over medium heat. Add the chopped onions and sauté for about 3-4 minutes until translucent.
- Add the Garlic: Toss in the minced garlic and stir for about 30 seconds until aromatic.
- Stir in your chicken and give everything a good stir. Pour in the chicken broth, scraping the bottom of the pot. Bring to a gentle simmer.
- Add the cream cheese while stirring, allowing it to soften. Pour in the heavy cream and continue to stir.
- Season with salt, pepper, and dried herbs. Let simmer for about 10-15 minutes, adding greens if desired.
- Serve it up! Ladle into bowls and top with extra herbs or crispy bacon bits.
Notes
This soup can be made ahead of time and keeps well in the fridge for 3-4 days. It also freezes beautifully.
