Ingredients

  • 1 cup Lentils (brown or green)
  • 2 cups Vegetable broth
  • 1 cup Coconut milk
  • 1 medium Onion, chopped
  • 4 cloves Garlic, minced
  • 1 medium Carrot, diced
  • 2 cups Spinach (fresh or frozen)
  • 1 tsp Cumin
  • 1 tsp Smoked paprika
  • Salt and pepper, to taste

Instructions

  1. Heat a tablespoon of olive oil in a large pot over medium heat. Add the chopped onion and sauté until it’s translucent—about 5 minutes.
  2. Add the minced garlic and diced carrot. Cook for another 3-4 minutes until the carrots soften.
  3. Stir in the lentils and vegetable broth. Bring to a boil, then reduce the heat and let it simmer uncovered for about 25 minutes until the lentils are tender.
  4. Pour in the coconut milk and stir. Allow it to simmer for an additional 10 minutes, until thickened.
  5. Stir in the spinach, and let it wilt. Season with salt, pepper, cumin, and smoked paprika.

Notes

Great served in rustic bowls with a sprinkle of fresh parsley or crumbled feta. For heartiness, pair with crusty bread or a side salad.
