Ingredients

- 1 cup Lentils (brown or green)
- 2 cups Vegetable broth
- 1 cup Coconut milk
- 1 medium Onion, chopped
- 4 cloves Garlic, minced
- 1 medium Carrot, diced
- 2 cups Spinach (fresh or frozen)
- 1 tsp Cumin
- 1 tsp Smoked paprika
- Salt and pepper, to taste
Instructions
- Heat a tablespoon of olive oil in a large pot over medium heat. Add the chopped onion and sauté until it’s translucent—about 5 minutes.
- Add the minced garlic and diced carrot. Cook for another 3-4 minutes until the carrots soften.
- Stir in the lentils and vegetable broth. Bring to a boil, then reduce the heat and let it simmer uncovered for about 25 minutes until the lentils are tender.
- Pour in the coconut milk and stir. Allow it to simmer for an additional 10 minutes, until thickened.
- Stir in the spinach, and let it wilt. Season with salt, pepper, cumin, and smoked paprika.
Notes
Great served in rustic bowls with a sprinkle of fresh parsley or crumbled feta. For heartiness, pair with crusty bread or a side salad.
