Ingredients

1 lb shrimp, peeled and deveined

2 cups cooked rice (white or jasmine)

1 tbsp butter

1 shallot, finely chopped

2 garlic cloves, minced

2 tbsp tomato paste

½ cup roasted red peppers, finely chopped

¾ cup heavy cream

½ cup grated Parmesan cheese

Salt & pepper to taste

Optional: red pepper flakes, fresh parsley for garnish


Instructions

In a large skillet, melt butter over medium heat. Add shallots and garlic; sauté for 2–3 minutes until soft and fragrant.

Stir in tomato paste and roasted red peppers, cooking for another 2 minutes.

Pour in cream and stir until the sauce is smooth.

Add Parmesan and stir until melted and creamy.

Add shrimp and cook 3–4 minutes until pink and cooked through.

Stir in cooked rice and toss to coat in the sauce.

Season with salt, pepper, and optional chili flakes. Garnish with parsley and serve hot.
