Ingredients
1.2 kg boneless chicken breast, sliced
4 cups cooked jasmine rice
2 cups fresh spinach
1 cup cherry tomatoes, halved
½ cup light cream cheese
¼ cup grated Parmesan
1 tsp garlic powder
2 tsp olive oil
Salt & pepper, to taste
Instructions
Heat olive oil in a large skillet over medium heat. Add sliced chicken and garlic powder. Sear until golden and cooked through.
Lower heat. Add cream cheese with a splash of water, stirring to melt into a creamy sauce.
Stir in spinach and tomatoes. Cook until wilted and soft.
Mix in cooked jasmine rice. Toss well to combine.
Sprinkle with grated Parmesan and cracked black pepper. Serve hot and creamy!
