Ingredients
12 oz elbow macaroni or pasta of choice
2 tbsp butter
2 tbsp all-purpose flour
2 cups milk (whole or 2%)
1 cup shredded mozzarella cheese
1 cup shredded sharp cheddar cheese
½ cup grated Parmesan cheese
1 cup fresh spinach, chopped
½ cup sundried tomatoes, chopped (oil-packed or rehydrated dry)
1 tsp garlic powder or 2 fresh garlic cloves, minced
1 tsp Italian seasoning
Salt & freshly ground black pepper, to taste
Instructions
Boil pasta until al dente, drain, and set aside.
In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
Slowly add milk, whisking constantly until thickened (about 4–5 minutes).
Add cheeses, stirring until melted and smooth.
Season with garlic, Italian seasoning, salt, and pepper.
Stir in spinach and sundried tomatoes until spinach wilts.
Combine pasta with sauce and mix well.
Serve hot, optionally topped with extra Parmesan or a crispy breadcrumb finish.
