- 1 Rotisserie Chicken, shredded
- 8 Corn Tortillas
- 1 can Refried Beans
- 2 cups Shredded Lettuce
- 1 cup Tomato Salsa
- 1 Avocado, diced
- 1 cup Shredded Cheese
- 1/2 cup Sour Cream or Greek Yogurt
- 1/4 cup Fresh Cilantro, chopped
Instructions
- Preheat the oven to 400°F (200°C). Place corn tortillas on a baking sheet, drizzle with olive oil, and sprinkle with salt. Bake for 8-10 minutes, flipping halfway through.
- Shred the rotisserie chicken into bite-sized pieces.
- Heat the refried beans in a small saucepan over medium heat until warm and smooth.
- Assemble the tostadas by spreading refried beans on each tortilla, topping with shredded chicken, tomato salsa, shredded lettuce, diced avocado, and shredded cheese.
- Finish with a dollop of sour cream or Greek yogurt and sprinkle with fresh cilantro. Serve immediately.
