Ingredients

  • 1 Rotisserie Chicken, shredded
  • 8 Corn Tortillas
  • 1 can Refried Beans
  • 2 cups Shredded Lettuce
  • 1 cup Tomato Salsa
  • 1 Avocado, diced
  • 1 cup Shredded Cheese
  • 1/2 cup Sour Cream or Greek Yogurt
  • 1/4 cup Fresh Cilantro, chopped

Instructions

  1. Preheat the oven to 400°F (200°C). Place corn tortillas on a baking sheet, drizzle with olive oil, and sprinkle with salt. Bake for 8-10 minutes, flipping halfway through.
  2. Shred the rotisserie chicken into bite-sized pieces.
  3. Heat the refried beans in a small saucepan over medium heat until warm and smooth.
  4. Assemble the tostadas by spreading refried beans on each tortilla, topping with shredded chicken, tomato salsa, shredded lettuce, diced avocado, and shredded cheese.
  5. Finish with a dollop of sour cream or Greek yogurt and sprinkle with fresh cilantro. Serve immediately.
