- 1/2 pound cooked shrimp, peeled and deveined

- 1 large egg

- Cooking spray or olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the muffin tin by lightly coating it with cooking spray or olive oil.
- Mix together the cooked jasmine rice, chopped shrimp, grated cheese, and green onions in a large mixing bowl.
- Add the whisked egg into the mixture, seasoning with salt and pepper.
- Incorporate the breadcrumbs and mix until well combined.
- Fill each muffin cup with the mixture, packing it down gently.
- Bake for 20-25 minutes or until golden brown and crispy.
- Cool the muffins in the tin for 5 minutes before transferring to a wire rack.
Notes
For a vegetarian option, substitute shrimp with cooked crab, chicken, or tofu. You can also try adding different types of cheese or vegetables.
