  • 1/2 pound cooked shrimp, peeled and deveined
  • 1/2 cup grated cheddar cheese
  • 1/4 cup green onions, chopped
  • 1 large egg
  • 1/2 cup breadcrumbs
  • Salt and pepper to taste
  • Cooking spray or olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the muffin tin by lightly coating it with cooking spray or olive oil.
  3. Mix together the cooked jasmine rice, chopped shrimp, grated cheese, and green onions in a large mixing bowl.
  4. Add the whisked egg into the mixture, seasoning with salt and pepper.
  5. Incorporate the breadcrumbs and mix until well combined.
  6. Fill each muffin cup with the mixture, packing it down gently.
  7. Bake for 20-25 minutes or until golden brown and crispy.
  8. Cool the muffins in the tin for 5 minutes before transferring to a wire rack.

Notes
