- 2 cups Frozen Tater Tots
- 2 cups Potatoes, diced (Yukon Gold recommended)
- ½ cup Mayonnaise
- 1 tablespoon Dijon Mustard
- ½ cup Green Onions, chopped
- 1 cup Celery, diced
- Salt and Pepper, to taste
- ½ cup Cooked Bacon (optional)
- Paprika, for garnish
Instructions
- Preheat your oven to 425°F (220°C) and spread the frozen tater tots onto a baking sheet in a single layer. Bake according to package instructions until they are golden brown and crispy, approximately 20-25 minutes.
- Boil the diced potatoes with a pinch of salt until tender, about 10-15 minutes. Drain and cool.
- Combine the mayonnaise, Dijon mustard, salt, and pepper in a large mixing bowl.
- Add the cooked and cooled potatoes, green onions, and diced celery to the bowl and gently fold.
- Chop the crispy tater tots into bite-sized pieces and fold them into the potato mixture.
- Transfer the salad to a serving bowl, sprinkle with paprika and additional green onions, cover, and chill in the refrigerator for about 30 minutes.
