- 6 Low-Carb Tortillas
- Cooking Oil for frying or spritzing (optional)
Instructions
- Preheat Your Oven: Set your oven to 400°F (200°C).
- Cook the Bacon: In a skillet over medium heat, cook the chopped bacon until crispy, about 5–7 minutes.
- Mix It Up: In a large mixing bowl, combine the cooked bacon, shredded chicken, cream cheese, ranch seasoning, and shredded cheese.
- Prepare the Tortillas: Warm low-carb tortillas in the microwave for 20–30 seconds to make them pliable.
- Assemble the Taquitos: Spoon about 2 tablespoons of the chicken mixture onto the center of each tortilla, roll tightly, and place seam-side down on a baking sheet.
- Egg Wash Time: Beat the egg and brush it onto the tops of each taquito. Spritz with oil for extra crunch.
- Bake: Place the baking sheet in the oven and bake for 15–20 minutes until golden, flipping halfway through.
