1 English cucumber, thinly sliced
1 cup fresh strawberries, hulled and sliced
2 tbsp red onion, thinly sliced (optional)
2 tbsp fresh mint or basil, chopped
1 tbsp olive oil
1 tbsp balsamic vinegar or lemon juice
Salt & pepper to taste
Optional: crumbled feta or goat cheese for extra creaminess
Instructions
In a large bowl, gently toss together cucumber, strawberries, and red onion.
Drizzle with olive oil and vinegar or lemon juice.
Add salt, pepper, and fresh herbs.
Toss lightly to coat and chill for 10 minutes before serving.
Add cheese on top just before serving if desired.
