Ingredients

- 2 cups Mixed Nuts (almonds, walnuts, cashews, or pecans)
- 1 cup Medjool Dates, pitted
- 1 cup Dark Chocolate, chopped
- ¼ cup Honey or Maple Syrup
- ½ teaspoon Sea Salt
- 1 teaspoon Vanilla Extract (optional)
Instructions
- Prep your pan by preheating the oven to 350°F (175°C) and lining an 8-inch square baking pan with parchment paper.
- Blend the mixed nuts and Medjool dates in a food processor until you form a sticky mixture.
- Melt the dark chocolate using a double boiler or in the microwave, stirring every 20 seconds until smooth.
- Mix the blended nut-date mixture with the melted chocolate, honey (or maple syrup), and vanilla extract in a large bowl.
- Press the mixture into the prepared pan and ensure it’s packed evenly.
- Bake for about 15-20 minutes until the top is slightly golden.
- Cool completely, then lift out and slice into bars.
Notes
These nut bars can be stored in an airtight container at room temperature for a week or refrigerated for longer freshness. They can also be frozen for a couple of months.
