Delightful homemade date caramels bursting with natural sweetness, perfect for guilt-free indulgence or as a thoughtful gift.


Ingredients

  • 2 cups Medjool Dates, pitted
  • ½ cup Nut Butter (almond, cashew, or seed butter)
  • 2 tablespoons Coconut Oil
  • ¼ cup Maple Syrup or Honey
  • 1 teaspoon Sea Salt
  • 1 teaspoon Vanilla Extract

Instructions

  1. Prep your space with a clean cutting board, plate, and food processor.
  2. Take your pitted Medjool dates and add them to the food processor. Pulse them to break them down.
  3. Add in the nut butter and coconut oil. Blend until smooth.
  4. Pour in the maple syrup or honey, sea salt, and vanilla extract. Blend again until combined.
  5. Line a small square dish (8×8 inches) with parchment paper and transfer the mixture, pressing it down evenly.
  6. Pop the dish into the refrigerator for an hour to set.
  7. Remove the caramel from the fridge and slice it into squares or rectangles.
  8. Store in an airtight container in the fridge for up to 2 weeks.

Optional: Garnish with toppings like melted dark chocolate or shredded coconut for an extra treat.
