- 2 cups Medjool Dates, pitted
- ½ cup Nut Butter (almond, cashew, or seed butter)
- 2 tablespoons Coconut Oil
- ¼ cup Maple Syrup or Honey
- 1 teaspoon Sea Salt
- 1 teaspoon Vanilla Extract
Instructions
- Prep your space with a clean cutting board, plate, and food processor.
- Take your pitted Medjool dates and add them to the food processor. Pulse them to break them down.
- Add in the nut butter and coconut oil. Blend until smooth.
- Pour in the maple syrup or honey, sea salt, and vanilla extract. Blend again until combined.
- Line a small square dish (8×8 inches) with parchment paper and transfer the mixture, pressing it down evenly.
- Pop the dish into the refrigerator for an hour to set.
- Remove the caramel from the fridge and slice it into squares or rectangles.
- Store in an airtight container in the fridge for up to 2 weeks.
