- 1 pound Chicken Breast
- 1 cup Dill Pickle Chips
- ½ cup Ranch Dressing
- 8 small Tortillas (flour or corn)
- 1 cup Shredded Cheese (cheddar or Mexican blend)
- 2 tbsp Olive Oil
- Salt & Pepper (to taste)
Instructions
- Pat the chicken breasts dry with a paper towel and season both sides with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat and add the chicken breasts. Cook for about 6-7 minutes on each side until golden brown and cooked through.
- Remove the chicken from the skillet and let it rest. Once cool, shred the chicken and toss it with ranch dressing in the warm skillet.
- Stir in the dill pickle chips and let it simmer for about 5 minutes.
- Wipe out the skillet, turn the heat to medium, and sprinkle about ¼ cup of shredded cheese in a circle. Cook until golden and crispy, then flip to crisp the other side.
- Warm the tortillas in a dry skillet or microwave for about 30 seconds.
- Assemble the tacos with shredded chicken mixture, crispy cheese, and any extra toppings as desired.
- Serve with fresh cilantro and lime wedges.
