Ingredients

  • 1 pound Chicken Breast
  • 1 cup Dill Pickle Chips
  • ½ cup Ranch Dressing
  • 8 small Tortillas (flour or corn)
  • 1 cup Shredded Cheese (cheddar or Mexican blend)
  • 2 tbsp Olive Oil
  • Salt & Pepper (to taste)

Instructions

  1. Pat the chicken breasts dry with a paper towel and season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat and add the chicken breasts. Cook for about 6-7 minutes on each side until golden brown and cooked through.
  3. Remove the chicken from the skillet and let it rest. Once cool, shred the chicken and toss it with ranch dressing in the warm skillet.
  4. Stir in the dill pickle chips and let it simmer for about 5 minutes.
  5. Wipe out the skillet, turn the heat to medium, and sprinkle about ¼ cup of shredded cheese in a circle. Cook until golden and crispy, then flip to crisp the other side.
  6. Warm the tortillas in a dry skillet or microwave for about 30 seconds.
  7. Assemble the tacos with shredded chicken mixture, crispy cheese, and any extra toppings as desired.
  8. Serve with fresh cilantro and lime wedges.
