Ingredients

  • 1 packet (2 ¼ tsp) active dry yeast

  • 1 large egg
  • ¾ cup whole milk (warm)
  • 4 tbsp unsalted butter (melted)
  • 1 tbsp vanilla extract
  • 1 cup brown sugar (packed)
  • 2 tsp ground cinnamon
  • Cream cheese frosting (optional)

Instructions

  1. Activate the Yeast: In a small bowl, combine warm milk with 1 tablespoon of sugar. Sprinkle yeast over and let sit for 5-10 minutes until bubbly.
  2. Mix the Dry Ingredients: In a large mixing bowl, whisk together flour, remaining sugar, and salt.
  3. Combine Wet and Dry Ingredients: Make a well in the dry mixture; add yeast mixture, egg, melted butter, and vanilla extract. Mix until shaggy dough forms.
  4. Knead the Dough: Turn dough onto a floured surface and knead for 5-7 minutes until smooth and elastic.
  5. Let It Rise: Place dough in a greased bowl, cover, and let rise in a warm place for about an hour until doubled in size.
  6. Prepare the Filling: Mix brown sugar and ground cinnamon in a small bowl.
  7. Roll Out the Dough: Punch down the dough and roll it into a rectangle, about 12×18 inches.
  8. Spread the Filling: Spread melted butter over the dough and sprinkle cinnamon-sugar evenly.
  9. Shape the Bunnies: Roll dough tightly into a log, slice into 12 pieces, and shape into bunny forms.
  10. Second Rise: Let shaped rolls rise for another 30 minutes.
  11. Bake the Rolls: Preheat oven to 350°F (175°C) and bake for 20-25 minutes until golden brown.
  12. Frost and Serve: Drizzle with cream cheese frosting and enjoy!
