Ingredients
- Sweet Corn (Canned or Frozen): About 2 cups
- Cornbread Mix: 1 box (about 8.5 oz)
- Sour Cream: 1 cup
- Eggs: 2 large
- Shredded Cheddar Cheese: 1 cup
- Butter: ¼ cup, melted
- Salt and Pepper: To taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine sweet corn, cornbread mix, sour cream, and eggs. Mix until blended.
- Fold in shredded cheddar cheese, melted butter, and season with salt and pepper.
- Transfer the mixture to a greased 9×13-inch baking dish, spreading evenly.
- Bake for 45-50 minutes, or until the top is golden and a toothpick comes out clean.
- Let it cool for 10-15 minutes before serving.
