Description

A refreshing and crunchy salad infused with traditional Asian flavors, perfect as a side dish or light lunch.


Ingredients

  • 2 medium-sized Cucumbers
  • 1 large Carrot
  • 1 medium Red bell pepper
  • 3 stalks Green onions
  • 2 tablespoons Sesame oil
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Soy sauce
  • 1 tablespoon Honey or sugar
  • 1/2 teaspoon Red pepper flakes (optional)
  • Sesame seeds (for garnish)

Instructions

  1. Prepare your vegetables: Wash cucumbers and carrots. Slice cucumbers thinly and julienne the carrot.
  2. Chop and mix: Dice red bell pepper and slice green onions.
  3. Create the dressing: In a bowl, combine sesame oil, rice vinegar, soy sauce, honey, and red pepper flakes. Whisk together.
  4. Combine and chill: Toss prepared veggies in a large bowl; pour dressing over and toss gently.
  5. Chill for optimal flavor: Cover and refrigerate for 15–30 minutes before serving.

Notes

Garnish with toasted sesame seeds for extra flavor. This salad can last 2-3 days in the fridge but is best enjoyed fresh.
