A refreshing and crunchy salad infused with traditional Asian flavors, perfect as a side dish or light lunch.
Ingredients

- 2 medium-sized Cucumbers
- 1 large Carrot
- 1 medium Red bell pepper
- 3 stalks Green onions
- 2 tablespoons Sesame oil
- 2 tablespoons Rice vinegar
- 1 tablespoon Soy sauce
- 1 tablespoon Honey or sugar
- 1/2 teaspoon Red pepper flakes (optional)
- Sesame seeds (for garnish)
Instructions
- Prepare your vegetables: Wash cucumbers and carrots. Slice cucumbers thinly and julienne the carrot.
- Chop and mix: Dice red bell pepper and slice green onions.
- Create the dressing: In a bowl, combine sesame oil, rice vinegar, soy sauce, honey, and red pepper flakes. Whisk together.
- Combine and chill: Toss prepared veggies in a large bowl; pour dressing over and toss gently.
- Chill for optimal flavor: Cover and refrigerate for 15–30 minutes before serving.
Notes
Garnish with toasted sesame seeds for extra flavor. This salad can last 2-3 days in the fridge but is best enjoyed fresh.
