Easy Blackstone Chicken Fajitas

Description

A flavorful and easy recipe for chicken fajitas made on a Blackstone griddle, perfect for gatherings.


Ingredients

  • 1 lb Chicken Breast, boneless and skinless
  • 23 Bell Peppers, assorted colors
  • 1 large Onion
  • 2 tbsp Olive Oil
  • Juice of 1 Lime
  • 2 tbsp Fajita Seasoning
  • 46 Tortillas (flour or corn)
  • Toppings: Shredded cheese, sour cream, salsa or pico de gallo, fresh cilantro, sliced avocados or guacamole

Instructions

  1. Prep the Chicken: Slice the chicken breast into thin strips.
  2. Marinate the Chicken: Combine chicken strips with olive oil, lime juice, and fajita seasoning. Marinate for 15-30 minutes.
  3. Prep the Veggies: Slice bell peppers and onion into thin strips.
  4. Heat up the Blackstone Griddle: Preheat to medium-high heat.
  5. Cook the Chicken: Add marinated chicken and cook for 3-5 minutes, flip and cook for another 3-4 minutes until fully cooked.
  6. Add Veggies: Push chicken to one side, add remaining oil, bell peppers, and onions; sauté for 5-7 minutes.
  7. Combine & Sizzle: Mix chicken and veggies, heat for 1 minute.
  8. Warm the Tortillas: Heat tortillas on griddle for about 30 seconds on each side.

Notes

Best enjoyed fresh from the griddle with a variety of toppings for customization.
