A flavorful and easy recipe for chicken fajitas made on a Blackstone griddle, perfect for gatherings.
Ingredients

- 1 lb Chicken Breast, boneless and skinless
- 2–3 Bell Peppers, assorted colors
- 1 large Onion
- 2 tbsp Olive Oil
- Juice of 1 Lime
- 2 tbsp Fajita Seasoning
- 4–6 Tortillas (flour or corn)
- Toppings: Shredded cheese, sour cream, salsa or pico de gallo, fresh cilantro, sliced avocados or guacamole
Instructions
- Prep the Chicken: Slice the chicken breast into thin strips.
- Marinate the Chicken: Combine chicken strips with olive oil, lime juice, and fajita seasoning. Marinate for 15-30 minutes.
- Prep the Veggies: Slice bell peppers and onion into thin strips.
- Heat up the Blackstone Griddle: Preheat to medium-high heat.
- Cook the Chicken: Add marinated chicken and cook for 3-5 minutes, flip and cook for another 3-4 minutes until fully cooked.
- Add Veggies: Push chicken to one side, add remaining oil, bell peppers, and onions; sauté for 5-7 minutes.
- Combine & Sizzle: Mix chicken and veggies, heat for 1 minute.
- Warm the Tortillas: Heat tortillas on griddle for about 30 seconds on each side.
Notes
Best enjoyed fresh from the griddle with a variety of toppings for customization.
