1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
½ cup sour cream or Greek yogurt
2 cups sharp cheddar cheese, grated
Pantry & Seasonings:
2 cups chicken broth
1 tbsp Dijon mustard (optional)
1 tsp dried thyme
½ tsp garlic powder
½ tsp onion powder
¼ tsp salt (or to taste)
¼ tsp pepper
Grains & Veggies:
1 cup long-grain brown rice or risotto rice, rinsed
1 lb broccoli florets (fresh or frozen)
Instructions
Layer in the Crockpot: Add chicken, rice, broth, mustard (if using), and all seasonings. Stir to combine.
Cook: Cover and cook on LOW for 4–5 hours or until rice is tender and chicken is cooked through.
Add Broccoli: Stir in broccoli during the last 30 minutes of cooking.
Finish Creamy: Stir in sour cream and cheddar. Let melt for 5–10 minutes before serving.
