Ingredients

1 large cucumber, thinly sliced

1 cup cherry tomatoes, halved

1/2 cup fresh mozzarella balls (bocconcini or ciliegine)

1/4 cup fresh basil leaves

2 tablespoons olive oil

1 tablespoon balsamic vinegar or glaze

Salt and pepper to taste


Instructions

In a serving bowl, combine cucumber slices, cherry tomatoes, mozzarella, and basil.

Drizzle with olive oil and balsamic.

Season with salt and pepper. Toss gently and serve fresh.
