Description

A creamy, cheesy and low-carb delight that combines broccoli, cauliflower, and savory sausage in a comforting au gratin dish.


Ingredients

  • 1 head of broccoli
  • 1 head of cauliflower
  • 1 lb sausage (Italian or breakfast sausage)
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: breadcrumbs (almond flour or keto-friendly crumbs) for topping

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Chop the broccoli and cauliflower into bite-sized florets.
  3. Blanch the broccoli and cauliflower in salted boiling water for 3-4 minutes until slightly tender.
  4. Drain the veggies and plunge them into an ice bath.
  5. Cook the sausage in a skillet over medium heat until browned, about 5-7 minutes.
  6. Combine the heavy cream, garlic powder, salt, and pepper in a saucepan and heat until simmering.
  7. Stir in the cheddar and Parmesan cheeses until melted.
  8. Mix the blanched vegetables, cooked sausage, and cheese sauce in a bowl.
  9. Transfer to a greased baking dish, sprinkle with almond flour if using, and bake for 20-25 minutes until bubbly and golden.
  10. Serve after cooling for a few minutes.

Notes

For a lighter alternative, use full-fat coconut milk instead of cream. Feel free to experiment with different cheeses.
