A creamy, cheesy and low-carb delight that combines broccoli, cauliflower, and savory sausage in a comforting au gratin dish.

- 1 head of broccoli
- 1 head of cauliflower
- 1 lb sausage (Italian or breakfast sausage)
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Optional: breadcrumbs (almond flour or keto-friendly crumbs) for topping
Instructions
- Preheat the oven to 375°F (190°C).
- Chop the broccoli and cauliflower into bite-sized florets.
- Blanch the broccoli and cauliflower in salted boiling water for 3-4 minutes until slightly tender.
- Drain the veggies and plunge them into an ice bath.
- Cook the sausage in a skillet over medium heat until browned, about 5-7 minutes.
- Combine the heavy cream, garlic powder, salt, and pepper in a saucepan and heat until simmering.
- Stir in the cheddar and Parmesan cheeses until melted.
- Mix the blanched vegetables, cooked sausage, and cheese sauce in a bowl.
- Transfer to a greased baking dish, sprinkle with almond flour if using, and bake for 20-25 minutes until bubbly and golden.
- Serve after cooling for a few minutes.
Notes
For a lighter alternative, use full-fat coconut milk instead of cream. Feel free to experiment with different cheeses.
