Ingredients

- 2 cups grated zucchini
- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- ½ cup brown sugar
- 1 tsp baking soda
- ¼ tsp baking powder
- ½ tsp salt
- 1 tsp ground cinnamon
- 2 large eggs
- ⅓ cup vegetable oil
- 1 tsp vanilla extract
- ½ cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the muffin tin by lining it with paper liners or greasing the cups.
- Grate the zucchini and squeeze out excess moisture.
- Mix the dry ingredients in a large bowl.
- Whisk together the wet ingredients in another bowl.
- Combine the wet and dry ingredients, and fold in the zucchini and optional additions.
- Fill the muffin tin with batter, about ¾ full.
- Bake for 20-25 minutes until a toothpick comes out clean. Let cool before serving.
