This Easy Orange Chicken Meal Prep is a perfect mix of sweet, savory, and tangy. Tender chicken in a bright orange glaze paired with fluffy rice and crisp broccoli makes this a takeout-style meal you’ll actually feel good about. Make-ahead meals never tasted this fresh!
Ingredients
Chicken
2 lbs boneless, skinless chicken breasts
2 tbsp sesame oil
Orange Sauce
1 cup orange juice
¼ cup chicken broth
¼ cup low-sodium soy sauce
1 tsp garlic powder
1 tbsp fresh grated ginger
½ tbsp orange zest
3 tbsp honey
½ tsp black pepper
Toppings
Chopped green onion
2 tbsp sesame seeds
Broccoli & Rice
1 cup rice
1½ cups water
2 small heads of broccoli, chopped
Salt and black pepper, to taste
Instructions
Cook rice: Rinse rice, then combine with water and a pinch of salt in a pot. Bring to a boil, then simmer covered for 15 minutes. Let sit.
Steam broccoli: Lightly steam broccoli until bright green and tender, about 5–7 minutes.
Cook chicken: Cut chicken into bite-sized pieces. Sauté in sesame oil over medium heat until golden and cooked through, about 8–10 minutes.
Make sauce: In a bowl, whisk orange juice, broth, soy sauce, garlic powder, ginger, zest, honey, and pepper. Add to chicken and simmer until thickened, 5–7 minutes.
Assemble: Divide rice, chicken, and broccoli into 4 containers. Top with green onion and sesame seeds.
