Ingredients

1 can (15 oz) corn, drained (or 1 ½ cups fresh or frozen corn)
1 cup diced red bell pepper
1/2 cup diced red onion
1 cup shredded cheddar cheese
1/2 cup mayo or sour cream (or mix of both)
1 bag (9.25 oz) Chili Cheese Fritos, slightly crushed
Fresh parsley for garnish (optional)
Salt & pepper to taste
Instructions
In a large bowl, combine corn, bell pepper, onion, and cheese.
Mix in mayo or sour cream until everything is evenly coated.
Just before serving, fold in the Fritos to keep them nice and crunchy.
