Ingredients

For the Salmon:

4 salmon fillets (6 oz each)

2 tablespoons olive oil

3 garlic cloves, minced

Juice and zest of 1 lemon

Salt and black pepper to taste

For the Bowls:

2 cups cooked wild rice

2 cups broccoli florets

1 tablespoon olive oil

Salt and pepper to taste

Optional garnish: lemon wedges, chopped parsley


Instructions

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a small bowl, mix olive oil, garlic, lemon juice, lemon zest, salt, and pepper. Brush mixture over salmon fillets.

Roast salmon for 12–15 minutes or until flaky.

Meanwhile, steam or roast broccoli until just tender. Season with olive oil, salt, and pepper.

Assemble bowls with ½ cup wild rice, broccoli, and a salmon fillet. Garnish as desired.
