Description

Ingredients

  • Bone-in, skin-on chicken thighs
  • Yukon Gold potatoes
  • Fresh garlic
  • Grated parmesan cheese
  • Olive oil
  • Dried Italian herbs
  • Salt
  • Pepper
  • Lemon juice

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken thighs dry and season with salt, pepper, and half of the herbs.
  3. Mix minced garlic with melted butter, remaining herbs, and lemon juice.
  4. Cut potatoes into chunks and coat with olive oil, salt, pepper, and half of the parmesan cheese.
  5. Arrange potatoes on a baking sheet and nestle chicken thighs on top.
  6. Pour the garlic mixture over everything and sprinkle with remaining parmesan.
  7. Roast in the oven for 40–45 minutes until chicken reaches 165°F (75°C).
  8. Let rest for 5–10 minutes before serving.
  9. Garnish with fresh parsley and serve hot.

Notes

For extra crispiness, broil the chicken for a few minutes at the end. Can be made ahead and stored in the fridge for up to 24 hours before baking.
