Ingredients
- Bone-in, skin-on chicken thighs
- Yukon Gold potatoes
- Fresh garlic
- Grated parmesan cheese
- Olive oil
- Dried Italian herbs
- Salt
- Pepper
- Lemon juice
Instructions
- Preheat your oven to 425°F (220°C).
- Pat the chicken thighs dry and season with salt, pepper, and half of the herbs.
- Mix minced garlic with melted butter, remaining herbs, and lemon juice.
- Cut potatoes into chunks and coat with olive oil, salt, pepper, and half of the parmesan cheese.
- Arrange potatoes on a baking sheet and nestle chicken thighs on top.
- Pour the garlic mixture over everything and sprinkle with remaining parmesan.
- Roast in the oven for 40–45 minutes until chicken reaches 165°F (75°C).
- Let rest for 5–10 minutes before serving.
- Garnish with fresh parsley and serve hot.
Notes
For extra crispiness, broil the chicken for a few minutes at the end. Can be made ahead and stored in the fridge for up to 24 hours before baking.
