Garlic Shrimp Crostini with Avocado

Description

A delicious and easy-to-make appetizer combining garlic shrimp and creamy avocado on crunchy crostini.


Ingredients

  • 1 Baguette, sliced into ½-inch rounds
  • 1 lb Large shrimp, peeled and deveined
  • 4 Cloves garlic, minced
  • 2 tbsp Olive oil, plus extra for drizzling
  • 1 Avocado, sliced
  • 1 tbsp Lemon juice
  • 2 tbsp Fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Slice the baguette and place on a baking sheet lined with parchment paper.
  2. Drizzle olive oil over the baguette slices and sprinkle with salt. Toast in the oven for 10-12 minutes until golden brown.
  3. Heat a tablespoon of olive oil in a skillet over medium heat. Sauté minced garlic for 30 seconds.
  4. Add the shrimp to the pan and cook for 2-3 minutes per side until pink. Squeeze fresh lemon juice over the shrimp.
  5. Slice the avocado and layer on each crostini. Top with the garlic shrimp. Garnish with fresh parsley.

Notes

For a spicy kick, add red pepper flakes to the shrimp. Leftover shrimp make a great topping for salads or pasta.
