Description
A delicious and easy-to-make appetizer combining garlic shrimp and creamy avocado on crunchy crostini.
Ingredients

- 1 Baguette, sliced into ½-inch rounds
- 1 lb Large shrimp, peeled and deveined
- 4 Cloves garlic, minced
- 2 tbsp Olive oil, plus extra for drizzling
- 1 Avocado, sliced
- 1 tbsp Lemon juice
- 2 tbsp Fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Slice the baguette and place on a baking sheet lined with parchment paper.
- Drizzle olive oil over the baguette slices and sprinkle with salt. Toast in the oven for 10-12 minutes until golden brown.
- Heat a tablespoon of olive oil in a skillet over medium heat. Sauté minced garlic for 30 seconds.
- Add the shrimp to the pan and cook for 2-3 minutes per side until pink. Squeeze fresh lemon juice over the shrimp.
- Slice the avocado and layer on each crostini. Top with the garlic shrimp. Garnish with fresh parsley.
Notes
For a spicy kick, add red pepper flakes to the shrimp. Leftover shrimp make a great topping for salads or pasta.
