This Gluten-Free Apple Cinnamon Coffee Cake is everything you love about a classic coffee cake—moist, spiced, and topped with a crumbly streusel—but made without gluten. Ingredients
For the cake:
1 1/2 cups gluten-free all-purpose flour (with xanthan gum)
1/2 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
1/2 cup granulated sugar
1/4 cup brown sugar
1/2 cup unsalted butter, softened
2 large eggs
1/2 cup sour cream or plain yogurt
1 tsp vanilla extract
1 1/2 cups chopped apples (peeled)
For the cinnamon swirl:
1/4 cup brown sugar
1 tsp cinnamon
For the streusel topping:
1/3 cup gluten-free flour
1/4 cup brown sugar
1/2 tsp cinnamon
3 tbsp cold butter, cubed
Instructions
Preheat oven to 350°F (175°C). Grease an 8×8 inch pan.
In a small bowl, mix cinnamon swirl ingredients. Set aside.
For the cake, whisk flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
In a large bowl, cream butter and sugars until light. Beat in eggs, then mix in sour cream and vanilla.
Gradually add dry ingredients to wet. Fold in chopped apples.
Pour half the batter into the pan. Sprinkle with half the cinnamon swirl. Repeat with remaining batter and swirl.
Mix streusel ingredients with a fork until crumbly, then sprinkle on top.
Bake 35–40 minutes or until a toothpick comes out clean. Cool before slicing.
