Ingredients
For the Chicken Souvlaki
1.5 lbs chicken breast or thighs, cubed
3 tbsp olive oil
Juice of 1 lemon
3 garlic cloves, minced
1 tsp dried oregano
Salt & pepper to taste
For the Bowls
2 cups cooked lemon herb rice (add parsley, lemon zest, and olive oil to rice)
1 cup cherry tomatoes, halved
1 cucumber, diced
½ red onion, thinly sliced
½ cup Kalamata olives
1 cup tzatziki (homemade or store-bought)
Optional: warm pita or lettuce wraps for serving
Instructions
Marinate chicken in olive oil, lemon juice, garlic, oregano, salt & pepper for 30 minutes or overnight.
Grill or pan-sear chicken until golden and fully cooked.
In each bowl, layer lemon herb rice, veggies, and grilled chicken.
Add a generous dollop of tzatziki and your choice of pita or lettuce on the side.
