Ingredients

Instructions

  1. Combine Ingredients: In a large mixing bowl, whisk together the Greek yogurt, lemon juice, minced garlic, olive oil, dried oregano, paprika, salt, and pepper until smooth.
  2. Prep the Chicken: Cut the chicken breasts into bite-sized chunks.
  3. Marinate: Toss the chicken pieces into the marinade and let it sit in the fridge for at least 30 minutes.
  4. Preheat Your Grill or Oven: Heat your grill to medium-high or preheat your oven to 400ºF (200ºC).
  5. Skewer the Chicken: Thread the marinated chicken onto skewers, alternating with bell pepper and onion pieces.
  6. Grill / Roast: Place the skewers on your grill or a baking sheet, grilling for about 10-12 minutes until the chicken is cooked through.
  7. Make the Feta Dip: In a food processor, combine crumbled feta cheese, olive oil, lemon juice, and fresh herbs. Blend until creamy.
