- 1 pound Flank Steak
- 1/4 cup Olive Oil
- 1/3 cup Balsamic Vinegar
- 1 tablespoon Honey
- 3 cloves Garlic, minced
- 5–6 cups Mixed Greens
- 1 cup Cherry Tomatoes
- 1 medium Cucumber, sliced
- 1/4 Red Onion, thinly sliced
- 1/2 cup Feta Cheese, crumbled
- Salt and Pepper, to taste
Instructions
- In a mixing bowl, whisk together olive oil, balsamic vinegar, honey, minced garlic, salt, and pepper. Marinate the flank steak in the mixture for at least 30 minutes.
- Preheat the grill over medium-high heat.
- Grill the steak for about 4–5 minutes on each side for medium-rare, adjusting the time for desired doneness.
- Let the steak rest for 5–10 minutes before slicing.
- In a large salad bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese. Top with sliced steak.
- Drizzle with leftover marinade or a balsamic vinaigrette and serve immediately.
Notes
For a heartier dish, serve the salad over quinoa or farro. You can also add avocado for creaminess or switch the greens for variety.
