Ingredients

• 2 boneless, skinless chicken breasts
• Salt and pepper, to taste
• 1 tbsp olive oil
• 4 slices fresh mozzarella
• 1 large ripe tomato, sliced
• Fresh basil leaves
• 2 ciabatta rolls, halved and toasted
• Balsamic glaze, for drizzling


Instructions

Preheat grill to medium-high.

Brush chicken with olive oil and season with salt and pepper.

Grill chicken 5–6 minutes per side, until cooked through.

Let rest for 5 minutes, then slice.

Layer chicken, mozzarella, tomato, and basil on the toasted ciabatta.

Drizzle with balsamic glaze.

Top with the other half of the roll and serve warm.
