- 2 tablespoons Olive oil
- 1/2 cup Butter, melted
- 4 cloves Fresh garlic, minced
- 2 tablespoons Fresh parsley, chopped
- 1 tablespoon Smoked paprika
- Salt and pepper, to taste
- 8–10 Skewers
Instructions
- Marinate the Chicken: Start by cutting your chicken thighs into bite-sized pieces. In a large mixing bowl, combine melted butter, olive oil, minced garlic, smoked paprika, chopped parsley, salt, and pepper. Whisk until smooth and coat the chicken pieces, marinating for at least 30 minutes.
- Skewer the Chicken: Prep your skewers. Thread the marinated chicken onto the skewers, alternating with veggies if desired.
- Preheat the Grill: Get your grill ready on medium-high heat. Place the skewers on the grill and cook for 5-7 minutes on each side, or until the chicken reaches an internal temperature of 165°F.
- Rest Before Serving: Let the skewers rest for about 5 minutes, then serve with melted butter and fresh herbs.
