1 ripe pineapple, halved lengthwise and cored
4 scoops vanilla ice cream
2 tbsp caramel sauce
¼ cup toasted shredded coconut
Optional: chopped nuts or a cherry on top
Instructions
Preheat grill to medium-high.
Grill pineapple halves (cut-side down) for 3–4 minutes until lightly charred.
Dice some grilled pineapple from each half and leave the rest whole for serving.
Fill each pineapple half with scoops of ice cream, diced grilled pineapple, a drizzle of caramel, and toasted coconut.
Serve immediately with spoons and smiles!
