Ingredients
- Shrimp (16 oz.)
- Scallops (8 oz.)
- Bell Peppers (1-2)
- Red Onion (1)
- Garlic (3-4 cloves)
- Olive Oil (¼ cup)
- Lemon Juice (½ cup)
- Fresh Herbs (1 cup)
- Salt and Pepper (to taste)
Instructions
- Prepare the Marinade: In a large mixing bowl, combine olive oil, lemon juice, minced garlic, chopped herbs, salt, and pepper. Whisk to combine.
- Add the Seafood: Toss shrimp and scallops into the marinade, coating thoroughly. Cover and refrigerate for at least 30 minutes.
- Prepare the Vegetables: Chop bell peppers and red onion into large chunks.
- Assemble the Skewers: Thread shrimp, bell pepper, scallop, and onion onto skewers, leaving space between items.
- Preheat the Grill: Preheat to medium-high heat (about 400°F).
- Grill the Skewers: Place skewers on the grill and cook for 2-3 minutes on each side until seafood is opaque and has grill marks.
- Serve and Enjoy: Remove skewers from the grill, let rest, and serve with herbs or lemon zest on top.
Notes
Skewers can be marinated ahead of time and grilled later. Use soaked wooden skewers to prevent burning.
