Cozy and easy Ground Beef Enchiladas, perfect for a weeknight dinner. Cheesy, saucy, and loaded with flavor!

- 1 lb (450 g) ground beef
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1/2 tsp dried oregano
- 1/4 tsp cayenne (optional)
- 1 (8 oz) can tomato sauce
- 1 cup beef or chicken broth
- 1 tbsp tomato paste
- 1 tsp sugar (optional)
- Salt and pepper to taste
- 8–10 flour or corn tortillas (6–8” size)
- 2 cups shredded cheese (Mexican blend, cheddar, or Monterey Jack)
- 1/4 cup chopped cilantro (optional)
- Lime wedges for serving
- Sour cream and sliced green onions for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Heat a large skillet over medium-high heat. Add olive oil and onion; sauté until translucent.
- Add ground beef and brown until no pink remains.
- Stir in garlic, chili powder, cumin, oregano, and cayenne. Cook until fragrant.
- Add tomato paste and simmer with tomato sauce and broth. Simmer to thicken, season to taste.
- Warm tortillas to prevent cracking.
- Spread sauce in the bottom of the baking dish. Fill tortillas with beef mixture and cheese, then roll.
- Top with remaining sauce and cheese. Cover with foil and bake for 15 minutes. Uncover and bake for another 8–10 minutes until cheese is bubbly.
- Let rest for 5 minutes before garnishing and serving.
Notes
For extra texture, you can use a mix of cheeses and add a squeeze of lime for brightness.
