Description
Cheesy and comforting ground beef enchiladas, perfect for weeknight dinners or potlucks.
Ingredients

- 1 lb (450 g) ground beef
- 1 medium onion, finely chopped
- 2–3 cloves garlic, minced
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1/2 tsp dried oregano
- 1/4 tsp cayenne (optional)
- 1 cup (240 ml) enchilada sauce
- 8–10 corn or flour tortillas
- 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
- 1 can (15 oz) black beans or pinto beans, drained and rinsed (optional)
- 1/4 cup chopped cilantro
- 1 lime, cut into wedges
- Salt and black pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C). Lightly oil a 9×13-inch baking dish.
- Heat the olive oil in a large skillet over medium-high heat. Cook the onion until translucent, about 4 minutes.
- Add the garlic and cook for 30 seconds until fragrant.
- Brown the ground beef, breaking it apart until no pink remains, about 6–8 minutes.
- Sprinkle in the chili powder, cumin, oregano, cayenne, salt, and pepper. Toast the spices for about 1 minute.
- Stir in half of the enchilada sauce and simmer for 2–3 minutes.
- Warm the tortillas in a dry skillet or microwave for 20–30 seconds.
- Spoon the beef mixture down the center of each tortilla, sprinkle with cheese and cilantro, then roll up and place seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the rolled tortillas.
- Bake uncovered for 20–25 minutes, until the cheese is melted and bubbly.
- Remove from the oven and let rest for 5 minutes. Garnish with cilantro and lime.
Notes
You can make these enchiladas ahead of time and refrigerate them for up to 24 hours before baking.
