Description

Delicious and easy breakfast egg cups filled with ham, cheese, and fresh veggies, perfect for busy mornings.


Ingredients

  • 6 large Eggs
  • 1 cup Diced Ham
  • 1 cup Shredded Cheese
  • 1/2 cup Bell Peppers, diced
  • 2 tablespoons Green Onions, chopped
  • 1/4 cup Milk
  • Salt and Pepper, to taste
  • Cooking Spray or Oil, for greasing the muffin tin

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. Grease the muffin tin with cooking spray or oil.
  3. Whisk the eggs and milk together in a large bowl until frothy.
  4. Toss in the diced ham, shredded cheese, bell peppers, and green onions. Season with salt and pepper.
  5. Fill each muffin cup with the egg mixture, about three-quarters full.
  6. Bake for 20-25 minutes until golden and set.
  7. Cool in the muffin tin for about 5 minutes before removing.
  8. Plate and enjoy warm!
