- 2 cups Cooked Chicken Breast, shredded or diced
- 1 cup Pineapple Chunks, fresh or canned (drained)
- 1/2 cup Mayonnaise
- 1/2 cup Chopped Celery
- 1/4 cup Green Onions, thinly sliced
- 1/3 cup Macadamia Nuts, chopped
- 1/4 cup Coconut Flakes, unsweetened
- 1 tablespoon Lemon Juice
- Salt & Pepper, to taste
Instructions
- Cook your chicken: If using raw chicken breasts, season and cook until fully done (about 20-25 minutes at 375°F). Shred or chop into pieces.
- Mix the mayo dressing: Combine mayonnaise with lemon juice in a large bowl.
- Add the ingredients: Stir in the chicken, pineapple, celery, green onions, and macadamia nuts.
- Incorporate the coconut flakes gently into the mixture.
- Chill (optional): Refrigerate for about 30 minutes for the flavors to meld.
- Serve: Scoop into a bowl, garnish as desired, and enjoy!
