- 1 lb Chicken Thighs, boneless and skinless
- 2 cups Fresh Pineapple, cubed
- 1 Red Bell Pepper, chopped
- 1 Yellow Bell Pepper, chopped
- 1 Green Bell Pepper, chopped
- 1 Red Onion, chopped
- 1/4 cup Soy Sauce
- 2 tbsp Honey
- 3 cloves Garlic, minced
- 1 tsp Ground Ginger
- 1 tbsp Sesame Oil
- 1/2 tsp Black Pepper
- 2 Green Onions, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- Combine soy sauce, honey, minced garlic, ground ginger, and sesame oil in a bowl.
- Marinate the chicken thighs in the mixture for about 30 minutes.
- Chop the fresh pineapple, bell peppers, and red onion into bite-sized pieces.
- Lay the marinated chicken on a baking sheet and surround it with the chopped veggies.
- Sprinkle black pepper over everything, and roast in the oven for 25-30 minutes.
- Remove from oven and garnish with chopped green onions before serving.
Notes
Feel free to substitute chicken thighs with breasts, and add more veggies like zucchini or carrots for extra nutrition.
