Ingredients

  • 1 cup Black Beans, rinsed and drained
  • 1 cup Oats, rolled or quick
  • ½ cup Cocoa Powder, unsweetened
  • ⅓ cup Maple Syrup
  • ¼ cup Almond Butter
  • 2 large Eggs
  • 1 teaspoon Baking Powder
  • ½ cup Chocolate Chips, dark or semi-sweet

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease an 8×8-inch baking pan or line it with parchment paper.
  3. In a blender or food processor, combine the black beans, oats, cocoa powder, maple syrup, almond butter, eggs, and baking powder. Blend until smooth.
  4. Fold in the chocolate chips.
  5. Pour the batter into the prepared baking dish and spread evenly. Bake for about 20-25 minutes.
  6. Let cool for 10-15 minutes before cutting into squares.

Notes

For vegan brownies, substitute eggs with flax eggs. Store leftovers in an airtight container at room temperature for up to 3 days.
