Description

A deliciously wholesome take on classic banana bread, these protein-packed muffins are perfect for breakfast, snacks, or guilt-free desserts.


Ingredients

  • 3 large Ripe Bananas
  • 1 cup Oats
  • 1/2 cup Greek Yogurt
  • 2 large Eggs
  • 1/2 cup Protein Powder
  • 1/4 cup Honey or Maple Syrup
  • 1 teaspoon Baking Soda
  • 1 teaspoon Cinnamon (optional)
  • a pinch of Salt

Instructions

  1. Preheat the oven to 350°F (180°C) and prepare your muffin tin.
  2. Mash the ripe bananas until smooth in a large mixing bowl.
  3. Mix in Greek yogurt, eggs, and honey (or maple syrup) until well combined.
  4. Combine the dry ingredients: oats, protein powder, baking soda, cinnamon, and salt in another bowl.
  5. Fold the dry mixture into the wet mixture gently until just combined.
  6. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Cool the muffins in the tin for about 5 minutes before transferring to a wire rack.

Notes

These muffins can be customized with chocolate chips, nuts, or berries. Store in an airtight container for up to a week.
