- 1 lb Chicken Breast (boneless, skinless), diced
- 2 Bell Peppers (red, yellow, or orange), sliced
- 1 Zucchini, sliced
- 1 cup Broccoli Florets
- 2 cloves Garlic, minced
- 2 tbsp Olive Oil
- Salt, to taste
- Pepper, to taste
- 1 tsp Italian Seasoning (divided)
Instructions
- Dice chicken breast into bite-sized pieces, season with salt, pepper, and half of the Italian seasoning.
- In a skillet, heat olive oil over medium-high heat. Add chicken and sauté until golden, about 6–7 minutes.
- Add minced garlic and sauté for an additional minute before adding bell peppers, zucchini, and broccoli.
- Sprinkle remaining Italian seasoning and a pinch of salt. Cook for another 5–7 minutes until veggies are tender yet crisp.
- Remove from heat and let sit for a couple of minutes before serving.
Notes
Feel free to substitute vegetables based on your preferences. Serve with a drizzle of olive oil or lemon juice.
