Ingredients

  • 2 chicken breasts
  • 1 cup Greek yogurt
  • 3 garlic cloves, minced
  • Juice of 1 lemon
  • 2 teaspoons dried oregano
  • Salt and pepper to taste
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 red onion, thinly sliced
  • 1 can chickpeas, rinsed
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 cup tzatziki sauce

Instructions

  1. In a bowl, mix Greek yogurt, lemon juice, garlic, oregano, salt, and pepper. Marinate chicken breasts for at least 30 minutes.
  2. Preheat grill or skillet to medium-high and cook chicken for 6-8 minutes on each side, until internal temperature reaches 165°F.
  3. Prepare tzatziki by mixing Greek yogurt, shredded cucumber, garlic, dill, and salt. Set aside.
  4. Chop cucumber, cherry tomatoes, and red onion. Optionally toss with olive oil, lemon juice, and salt.
  5. Cook rice or quinoa according to package instructions.
  6. Assemble bowls with rice/quinoa, sliced chicken, veggies, chickpeas, and feta.
  7. Drizzle tzatziki and olive oil on top before serving.

Notes

Let chicken rest before slicing to keep it juicy. Cooking rice in broth adds more flavor.
