- 2 chicken breasts
- 1 cup Greek yogurt
- 3 garlic cloves, minced
- Juice of 1 lemon
- 2 teaspoons dried oregano
- Salt and pepper to taste
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 red onion, thinly sliced
- 1 can chickpeas, rinsed
- 1/2 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 cup tzatziki sauce
Instructions
- In a bowl, mix Greek yogurt, lemon juice, garlic, oregano, salt, and pepper. Marinate chicken breasts for at least 30 minutes.
- Preheat grill or skillet to medium-high and cook chicken for 6-8 minutes on each side, until internal temperature reaches 165°F.
- Prepare tzatziki by mixing Greek yogurt, shredded cucumber, garlic, dill, and salt. Set aside.
- Chop cucumber, cherry tomatoes, and red onion. Optionally toss with olive oil, lemon juice, and salt.
- Cook rice or quinoa according to package instructions.
- Assemble bowls with rice/quinoa, sliced chicken, veggies, chickpeas, and feta.
- Drizzle tzatziki and olive oil on top before serving.
Notes
Let chicken rest before slicing to keep it juicy. Cooking rice in broth adds more flavor.
