A vibrant and satisfying chicken bowl packed with fresh veggies, healthy grains, and bold Mediterranean flavors.


Ingredients

Scale
  • 1 lb Chicken Breast
  • 3 tbsp Olive Oil
  • 1 tsp Paprika
  • 1 tsp Garlic Powder
  • 1 cup Quinoa
  • 1 cup Cherry Tomatoes
  • 1 medium Cucumber
  • 1/2 small Red Onion
  • 1/2 cup Feta Cheese, crumbled
  • 1/4 cup Fresh Parsley, chopped
  • Juice of 1 Lemon

Instructions

  1. Marinate the chicken with olive oil, paprika, garlic powder, salt, and pepper for at least 15 minutes.
  2. Cook the chicken in a grill pan over medium-high heat for 6-8 minutes on each side until cooked through.
  3. Rinse quinoa and cook with double the amount of water in a pot for about 15 minutes until absorbed.
  4. Dice cherry tomatoes, cucumber, and slice the red onion. Mix with olive oil, lemon juice, salt, and parsley.
  5. Assemble the bowl with quinoa, chicken, veggie mix, and crumbled feta on top.

Notes

Feel free to swap ingredients based on availability. Add chili flakes for a spicy kick!
