- 1 lb boneless, skinless chicken breast
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper, to taste
- 4 whole wheat tortillas
- Greek salad mix (cucumber, tomatoes, red onion)
- 1 cup tzatziki sauce
- Crumbled feta cheese, for topping
Instructions
- Marinate the Chicken: In a medium bowl, whisk together olive oil, garlic powder, dried oregano, paprika, salt, and pepper. Add the chicken breasts, ensuring they’re well-coated. Let it marinate for at least 30 minutes.
- Cook the Chicken: Heat a skillet over medium-high heat. Once hot, add the marinated chicken. Cook for about 6-7 minutes on each side, until no longer pink in the center. Let it rest for a few minutes, then slice it into strips.
- Prepare Toppings: While the chicken is resting, prepare your Greek salad mix by chopping cucumbers, tomatoes, and red onions. Squeeze a little lemon juice, sprinkle some salt, and mix it all together.
- Warm the Tortillas: In a dry skillet, warm your whole wheat tortillas for about 30 seconds on each side over medium-low heat. Wrap them in a clean towel to keep them warm.
- Assemble the Tacos: Grab a warmed tortilla, lay down a generous portion of seasoned chicken strips, followed by the Greek veggies. Drizzle tzatziki sauce on top, and finish with crumbled feta.
