A delicious twist on classic tacos featuring juicy chicken marinated with Mediterranean herbs and served with fresh veggies and tzatziki sauce.


Ingredients

  • 1 lb boneless, skinless chicken breast
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 4 whole wheat tortillas
  • Greek salad mix (cucumber, tomatoes, red onion)
  • 1 cup tzatziki sauce
  • Crumbled feta cheese, for topping

Instructions

  1. Marinate the Chicken: In a medium bowl, whisk together olive oil, garlic powder, dried oregano, paprika, salt, and pepper. Add the chicken breasts, ensuring they’re well-coated. Let it marinate for at least 30 minutes.
  2. Cook the Chicken: Heat a skillet over medium-high heat. Once hot, add the marinated chicken. Cook for about 6-7 minutes on each side, until no longer pink in the center. Let it rest for a few minutes, then slice it into strips.
  3. Prepare Toppings: While the chicken is resting, prepare your Greek salad mix by chopping cucumbers, tomatoes, and red onions. Squeeze a little lemon juice, sprinkle some salt, and mix it all together.
  4. Warm the Tortillas: In a dry skillet, warm your whole wheat tortillas for about 30 seconds on each side over medium-low heat. Wrap them in a clean towel to keep them warm.
  5. Assemble the Tacos: Grab a warmed tortilla, lay down a generous portion of seasoned chicken strips, followed by the Greek veggies. Drizzle tzatziki sauce on top, and finish with crumbled feta.

Notes

Feel free to customize your tacos with your favorite veggies or toppings. For a dairy-free version, use vegan feta.
